Cow Heart Navajo Tacos

We are finishing off our last cow before the next one comes. What to do with the cow heart? Sliced, pan fried, then chopped up on our Navajo tacos with beans, sour cream, cheese, and salsa. There are no secrets with our kids. They will pretty much try anything. This is actually the first time we as parents had tried cow heart too (that we know of). Very beefy steak taste. Not bad at all. Just muscle like any other steak on the cow. Maybe we should have saved it for Valentine's Day.
